Pronto Puffs

(weird name... I don't even remember if this is good or not...)

  • 1 c Cornmeal
  • 2 tsp Baking Powder
  • 1 c Flour
  • 1 tsp Salt
Mix well, and beat together with
  • 1 1/4 c Milk
  • 1 Egg
Cut hotdogs into 3rds. Drop in batter, then deep fat fry.
Mini corndog bites!

Pumpkin Drops

  • 1 1/2 c Flour
  • 1/3 c Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/4 c Milk
  • 2 Tbsp Oil
  • 1/2 c Pumpkin
  • 1/2 tsp Vanilla
  • 1 Egg
To Shake in:
  • 1/2 c Sugar
  • 1 tsp Cinnamon
In a large bowl, combine flour, sugar, baking powder, salt, and cinnamon. Mix together milk, oil, pumpkin, vanilla, and egg. Stir milk mixture into dry ingredients, just until moistened. Drop by spoonful in hot oil (375).
Once removed, coat with powdered sugar and/or sugar and cinnamon mix.

Calzones

Crust: Use Rhodes frozen rolls or pizza dough
Sauce: Spaghetti (or pizza, obviously ;) ), mix with meat and cheese.

2 rolls (or put several together), add filling, fold over and crimp edges. Bake at 400 for 15-20 minutes.

(obviously an easy one...)

Creppes

In a blender:
  • 1 1/2 c Milk
  • 2 Eggs
Add while blending:
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 1/8 c Flour
Fry in a skillet with butter.
Chocolate Crepes
In blender:
  • 1 1/4 c Buttermilk
  • 3 Eggs
Mix:
  • 1 c Flour
  • 2 Tbsp sugar
  • 2 Tbsp Cocoa
Add to egg mix.

Banana Bread


  • 2 c Flour
  • 1 t Soda
  • 1/2 t Salt -- Sift together
  • 1 c Sugar
  • 1 c Shortening
  • 2 Eggs
  • 1 c Mashed Bananas (about 2)
  • 1/2 c Sour Milk
  • 1/2 c Walnuts (optional)

Cream sugar, shortening, and eggs together. Add bananas. Alternate sifted dry ingredients and sour milk. Pour into a well-greased bread pan and bake at 350 for 1 hour.
